GREAT NEXT DAY HAM RECIPES

HAM, SWEET POTATO, PINEAPPLE CASSEROLE
|
1 18-oz. Can sweet potatoes, chopped
4 slices canned pineapple, chopped
2 c. Slivered baked ham
½ c pineapple juice
2 tbsp. Brown sugar
¼ tsp. Ground cloves
¼ tsp. Cinnamon
¼ tsp. Nutmeg
Arrange potatoes, pineapple, and ham in casserole. Pour pineapple juice over top: sprinkle with remaining ingredients. Bake at 350°f for 45 minutes. Yeild: 4 servings

AFTER EASTER HAM AND ASPARAGUS CASSEROLE
|
2 c. cut or whole cooked asparagus
2 c. diced baked ham
½ c. grated cheese
¼ c. quick tapioca
¼ c. chopped onions
¼ c. chopped celery
2 tbsp. minced parsley

6 hard cooked eggs, sliced
1 c. cream
2 c. cream of mushroom soup
1 c. bread crumbs
¼ c. butter, melted
¼ tsp. pepper

Place asparagus in bottom of buttered casserole. Sprinkle ham over asparagus. Combine cheese, tapioca, pepper, onion, celery, parsley and eggs. Add cream to soup and stir with cheese mixture. Pour over asparagus and top with breadcrumbs mixed with butter. Bake, covered, at 350°F for 15 minutes. Remove cover and bake for 15 minutes longer. Serve with rice or noodles. Yield 12 servings.
